1. Combine 2 1/2 cups flour and 1 teaspoon salt.
2. Cut 1 cup shortening into the flour with a pastry cutter or knife until it looks like cornmeal.
3. Combine 1/4 cup cold water, 1 tablespoon white vinegar and 1 egg (beaten).
4. Add liquids to dry ingredients with a fork until dough sticks together.
Divide into two balls. Roll out between 2 sheets wax paper. Fill and bake according to directions.
(If baked shell is needed, prick bottom and sides well with a fork and bake at 375 for 10 - 12 minutes until golden brown.
Makes 2 9-inch pie crusts.
