I just came across this list of egg substitutes as I was getting ready to make banana bread for my hubby, and was short one egg: http://www.pioneerthinking.com/eggsub.html
- 2 tbsp cornstarch = 1 egg
- 2 tbsp arrowroot flour = 1 egg
- 2 tbsp potato starch = 1 egg
- 1 heaping tbsp soy powder + 2 tbsp water = 1 egg
- 1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg
- 1 banana = 1 egg in cakes
- 1 tbsp milled flax seed and 3 tbsp water = 1 egg - makes super light and fluffy cakes!
It worked out perfect, cause I had three bananas and the recipe only called for two, so I added another banana and called it good! (and boy was it a great bacth of banana bread - soooo yummy!) :)
