This is the easiest beef & broccoli ever! It is versatile and can be done in a pressure cooker or in a slow cooker.
For the beef and broccoli:
• 1 lb flank steak
• 1/2 cup soy sauce
• 1 can beef consommé (or beef stock)
• 1 Tbs sesame oil
• 1/4 cup brown sugar
• 1/4 tsp fresh ginger
• 3 Tbs minced garlic
• bit of fresh ground pepper
• 2 bunches broccoli
For the cornstarch slurry:
1 tablespoon cornstarch
1 splash water
Brown the beef in Saute mode. Pressure cook for 20 minutes on Meat/Stew mode.
Quick release, add fresh broccoli florets right on top.
Cook on “steam” setting for 3 minutes. Whisk in a corn starch slurry and let simmer for a few minutes or until thinkened.
Serve over hot rice.
