Ingredients
1 pound ground bison
1 pound stew meat (cut into bite sized pieces)
1 tablespoon shortening or olive oil
2 teaspoons salt
1 teaspoon black pepper
2 tablespoons onion powder or 2 medium sized onions
6 cloves garlic, minced
2 tablespoons chili powder
2 tablespoons cocoa powder (unsweetened)
2 tablespoons dried oregano
4 (15 ounce) cans tomato sauce
4 (15 ounce) cans black beans, drained
Directions
- Heat shortening in large stock pot.
- Add: ground bison, stew meat, salt, pepper and onion powder.
- Let meat cook for about 10 - 15 minutes.
- Add garlic, browning slightly, on medium heat.
- Add: tomato sauce, chili powder, cocoa powder and oregano. Stirring well.
- Once it reaches boiling, turn it down to a simmer.
- Cook, covered, for about an hour, stirring occasionally.
- Stir in beans, and simmer uncovered for about 20 minutes.
This is one of my and hubby's FAVORITE dinners!
Goes perfectly with bread bowls!
